Chef Harvey is pulling all the stops this year for Valentine’s Day: He’s breaking out the 25-year-old Aceto Balsamic Tradizionale di Modena — traditional balsamic vinegar from Modena — for his February 14th menu.
This isn’t the liquidy stuff you buy at the super market for everyday salads. This is special-occasion, thick and delicious aged vinegar, one of Italy’s most prized delicacies.
Unlike conventional vinegar, this isn’t made from wine. It’s made from pure grape juice from freshly pressed grape bunches. It’s then aged in different types of wood casks for decades — literally.
It’s not sour at all. In fact, it’s sweet. Some people even call it “grape candy.” Chef Harvey will be drizzling it over Parmgiano cheese, a classic pairing.
