Osso buco, an Italian winter classic (NOW AVAILABLE at Siena!)

It’s one of northern Italy’s most celebrated winter dishes: osso buco (literally, the center of the bone).

To create this iconic recipe, Chef Harvey and his kitchen staff slowly braise a beef shank in tomato, stock, and wine for hours and hours until the rich marrow in the bone’s center becomes liquid. They then serve the shank atop creamy slow-cooked polenta that’s been made even more flavorful with freshly grated Parmigiano Reggiano and clarified butter.
