Vitello Tonnato: Roast veal with tuna and anchovy sauce, a Piedmontese classic September 17 at Siena!

Here at Siena Ristorante Toscana, our focus is on Tuscan cuisine. But that doesn’t mean that executive chef Harvey Harris, one of Austin’s leading experts on Italian gastronomy, doesn’t love the foods from other regions as well.

That’s vitello tonnato, left, a classic dish of Piedmont in northwestern Italy where Barolo and Barbaresco wines are made.

Thinly sliced roast veal, served chilled with a tuna and anchovy sauce.
