Classic “Agnolotti dal Plin,” homemade filled pasta, September 17 at Siena!

Those are agnolotti (AHN-yoh-LOHT-tee) above, a classic filled pasta from Piedmont in northwest Italy.

Most believe that the name comes from the Italian anello meaning ring. But the shape is rectangular. And every one of them is “pinched” around the edges, hence the name agnolotti dal plin (plin means pinch in Piedmontese dialect).

It’s just one of the dishes that Siena Executive Chef Harvey Harris will be preparing for our Piedmont Food and Wine dinner on Monday, September 17. Spots are filling up fast so please don’t delay in reserving to ensure availability.
