Burrata, Puglia’s unmistakable take on mozzarella

Burrata is one of Italy’s most unique cheeses. It’s made by taking classic mozzarella and then stuffing it with cream, butter, and small chunks of mozzarella. The unmistakable creamy texture and rich flavor make it one of Italy’s greatest delicacies.

That’s Chef Harvey’s Burrata appetizer above: He serves it with pork belly, fig mostarda, shishito peppers, and pickled onions.
