Granita: The Italian snow cone at Siena!

The Italian word granita comes from granire, Italian for granulate.

It’s the Italian “snow cone”! Crushed ice flavored with a fruit reduction.

Chef Harvey and his team have added this wonderful raspberry granita just in time for warmer weather.

And rest assured: Chef Harvey’s granita isn’t made using cheap mass-produced fruit syrup. It’s made using a raspberry reduction that he and his team slowly cook down in the kitchen.
