Tuscan-style beef, they way they do it in Italian “ranchers country”
Most people think of Italian food as pasta and pizza and maybe risotto. They don’t realize that Italians also love to eat steak. And unless they’ve been there themselves, they probably don’t know that the best place to eat steak in Italy is in Tuscany.
That’s because since antiquity, Tuscany has always been “ranchers country.” Even today, some of the best beef in the world is raised and fed on Tuscan pastures.
Even though he studied Italian cuisine in northern Italy, it was in Tuscany (central Italy) where Chef Harvey Harris landed when he started working professionally in Italy. And Tuscan cuisine has always been the centerpiece of his authentic Italian menu at Siena Ristorante Toscana.
Currently, Chef Harvey is serving a wood-grilled, grass-fed beef tenderloin filet, with Gorgonzola, black truffle beef sugo, roasted potatoes, smoked bacon, onions, and fresh sage.
