Matthew Bushong, Siena bartender & mixologist extraordinaire

If you’ve ever sat at the bar at Siena Ristorante Toscana, you know there’s a lot more going on than just great wines by-the-glass and Chef Harvey’s superb Tuscan-inspired menu.

Bartender and mixologist Matthew Bushong (above) curates one of the hottest specialty cocktail menus in Austin, including his own fruit “infusions” and his own recipes, created especially to pair with Chef Harvey’s Italian comfort food appetizers.

Matthew moved to Austin from his hometown of Corpus Christi back in 1998 and he has been a vital part of the Siena team for nearly ten years.

We recently caught up with him as he was making what he considers to be one of his signature cocktails, the Honey Bee: Waterloo “Texas” Gin, a splash of grapefruit, honey simple syrup, shaken, served in a Martini glass, topped with Prosecco ($9 regularly, $7 during Happy Hour at the bar).

“I add lavender to this cocktail,” he told us, “it’s very strong but it’s balanced by the sweetness of the honey. That’s why I call it the ‘Honey Bee’.”
