House-cured pancetta at Siena

Chef Harvey uses house-cured pancetta (Italian bacon). The word pancetta means belly in Italian, in this case pig or hog belly. All of the hogs used for Chef Harvey’s pancetta are sourced in Texas (Broken Arrow Ranch feral hogs from South Texas).

Housemade pancetta is another one of those special touches that — we feel — sets Siena Ristorante apart. Here authenticity and wholesomeness are the keystones of Chef Harvey’s cuisine.
